After decades of migraines, I wanted more than getting through the day. I wanted to watch my sons grow up and meet my grandchildren.

I spent my career inside the American healthcare system. My nursing work focused on hospital administration, quality assurance, and risk management. I prepared hospitals for national surveys with the Joint Commission on Accreditation of Healthcare Organizations and co-founded the Oregon Association of Professionals in Quality Assurance. I trusted the doctors I worked beside. They were my colleagues. When they recommended something, I followed it as an insider who believed in the system.

My own health story began when I was eight. Our family doctor recommended removing my tonsils. In the years that followed, headaches became migraines that shaped the next four decades of my life. By 1995 they were debilitating.

Imitrex finally gave me relief. For me, it was a lifesaver. It also became what I thought of as a messenger killer: it quieted the pain, while I still wanted to understand what was happening in my body.

In 1996, after a gallbladder attack, I agreed to have my gallbladder removed. In 1998, a lobe of my thyroid was removed for Hashimoto's disease. I remember wanting answers beyond the next procedure. I wanted to understand whether food, rest, and the way I lived could play a part in caring for my health.

In 2000 I had an abnormal Pap test. By then, I had found a doctor who looked at me as a whole person. I remember her taking my hand and saying, "You have three years to live if you don't change your life." That warning changed everything. I had two sons about to graduate from high school. I wanted to walk beside them into adulthood. I wanted to meet my grandchildren.

I left my hospital job and started over. Over the next twenty years, I studied at the Optimum Health Institute, grew my own wheatgrass, ate whole live foods, and explored gut health and food preparation. I kept learning and trying to understand my own experience. In 2012 I encountered the work of Dr. Steven Gundry. After changing my diet to avoid lectins and A1 beta-casein, I experienced a dramatic quieting of the migraines that had been with me since childhood. That was my experience, and it changed how I thought about food.

Then a stress fracture in my foot brought another diagnosis: severe osteoporosis, shown on a DEXA scan. I returned to the food changes I had been making and added weight-bearing exercise and a vibration plate. My later scans showed improvement, then more improvement. I credit the changes I made in food and movement with helping me turn that part of my health around.

That is when I knew this cookbook had to exist. I had always loved cooking. I refused to give up the breads, desserts, family dinners, and comfort foods that made life feel like life. So I began rebuilding them, one at a time, around the ingredients I had chosen for myself. I wanted nourishment and the pleasure of a familiar meal to belong together.

These recipes have fed my family and my cooking classes. Now I hope they will feed yours. Heal Through Food holds years of learning, experimenting, and returning to the kitchen with a reason to keep going. Open the book, find something you cannot wait to make, and bring that pleasure into your own kitchen.

A thyroid cancer diagnosis made changing my daily life urgent.

I found a lump in my throat. Not a metaphorical lump. An actual one. It turned out to be a cancerous tumor on my thyroid. I thought I had done so much. Why me? How? I had spent years learning about food and health, but knowing something and putting it into practice every day were different things. That diagnosis made the difference impossible for me to ignore.

The cancer was not where my questions began. As a child, I had emergency exploratory surgery and my appendix was removed. My account of that experience is that the problem was mesenteric adenitis, not my appendix. I remember waking up and being told I would never have to worry about my appendix again.

As a young boy, I insisted that I wanted it back. Afterward, cramps and difficulty eating foods I loved pushed me to learn more about my own body.

I began learning to advocate for my health at the beginning of the internet, long before AI. One of my college professors introduced me to probiotics. That conversation mattered enormously to me. My mother and I were learning as we went, asking questions and trying to understand what helped. Food became something I studied as well as something I loved. Those early experiences stayed with me when I faced cancer years later.

I was living in Colombia when I sought advice about the cancer. I consulted doctors there and in the United States. I also spoke with Eastern medicine practitioners, including a fourth-generation Chinese herbalist. As I remember those conversations, the advice kept returning to surgery. I was searching for answers about my own situation, and I felt the weight of the decisions in front of me. I had a foundation in learning about food. Now I needed conviction in how I lived.

I took the work I had already been doing for this cookbook seriously in a new way. I changed my lifestyle and what I ate. I prayed more. Fresh, organic food became central to my days. Through the hardest fight of my life, the recipes gave me comfort, pleasure, and something to look forward to. Food was personal. The meals I was making were part of how I lived through that experience.

After two clear scans, with no tumor and nothing left to biopsy, I could say it: I was cancer-free and loving life. I believe the nutrition and lifestyle changes I made cured my cancer. I caught mine very early. Every case is different, and this cookbook is not a cancer treatment or a cure-all.

Cooking has always been part of my life. I grew up watching my parents in the kitchen. Later, travel through more than 45 countries introduced me to flavors and combinations that still inspire me. Those influences have a place in this book, alongside the much more personal work of changing how I ate and lived. I wanted food that I could enjoy while pursuing the health that mattered so much to me.

We put so much love into Heal Through Food, and I believe many of its lessons saved my life. I hope it helps you find some of the hope, tools, and courage I found. Start with a recipe that makes you hungry. Make it, enjoy it, and discover why the pleasure of good food belongs in this story too.
